Elmo's runs on one piece of equipment: a real wood-fired oven, tended by hand, all night. That's where the crust gets its chew-then-crackle, and it's why regulars argue about whether the char on their crust should go a little further.
The owner is in the dining room more nights than not — trading notes with guests about their pie, tuning the fire, occasionally re-litigating a star rating in the reviews. It's a small operation with a big personality, and it shows in the food.
Downtown Sturgeon Bay, next to Cherry Lanes Bowl, with a dining room built for groups, a patio strung with red umbrellas, and a little arcade tucked in the corner for when the pizza's still ten minutes out.
